Stuffed Omelette

Eggs make an excellent quick meal & they need not be boring

1 tabsp olive oil (or oil of your choice)
1 small red onion (or white), chopped finely
2 rashers of bacon, chopped (optional)
1 teasp curry powder
1 medium avocado, cubed
Salt & pepper
1 tab butter
1/2 cup grated jarlsberg, gruyere or cheddar cheese
2 teasp sweet chilli sauce
1 tabsp water


  1. Heat oil in a pan and add onion and bacon
  2. Cook until onion is soft
  3. Add avocado and curry powder and stir
  4. Transfer mixture to a bowl
  5. Beat eggs with milk, salt and pepper
  6. Preheat grill
  7. Melt butter in small frying pan
  8. When butter is foaming add egg mixture and shake pan to spread mixture evenly over base
  9. Cook for 2 minutes approx lifting edges to allow uncooked egg to flow underneath
  10. When set, remove from heat and top with onion mixture
  11. Sprinkly with cheese and pop under the grill until cheese has melted and golden brown
  12. Fold omelette in half, then cut in half and slide onto a warm plates
  13. Mix chilli sauce with water and drizzle over the top of omelette
  14. Serve with a fresh salad
  15. As an alternative filling, leave out bacon and avocado and use fried mushrooms & capsicum
