Stir-Fried Chinese Greens with Beans and Cashew Nuts

Add some protein with cashews to this tasty green stir-fry

Handful of raw cashew nuts
350g green beens
2 tabs oil
1 teasp sesame oil
2 cloves garlic, crushed
2 teasp grated fresh ginger
8 green spring onions/shallots
500g english spinach
2 bunches bok choy, chopped roughly
1 tablespoon teriyaki or oyster sauce
1 tab soy sauce
1 tab sweet chilli sauce
2 tabs chopped fresh corriander (optional)


  1. Heat oils in wok or large fry pan and stir fry cashews until golden
  2. Remove from pan and place on paper towel to drain
  3. Add garlic, ginger, beans and shallots to pan
  4. Stir fry until shallots and beans are tender
  5. Add spinach and bok choy and stir fry until bok choy is just wilted
  6. Add sauces and stir until combined and hot
  7. Serve sprinkled with cashew nuts and corriander
