
Savoury Mince - the saviour of any week!

Ingredients
1 kg good quality minced beef (4 star or above)
1 x onion, chopped finely
Small amount of olive oil or oil of your choice
Gravox or gravy powder or 1-3 tabs flour mixed with water
Good pinch mixed herbs
1 tabs freshly ground black pepper
Sploosh worstershire sauce
Sploosh tomato paste OR tomato sauce
2-4 tabs parrisiene essence, optional (an old fashioned browning mix - like DARK gravy)
1 - 3 tabs stock powder (beef, chicken or veggie) OR 1-2 cups liquid stock
1-2 cups water
Fresh parsley, optional
2-3 cups red wine, optional
Approx. 8-10 cups of finely chopped vegetables, preferrably fresh but frozen is also okay
Vegetables I use: corn, red capsicum, zucchini, broccoli including the large stem, cauliflower & the stem, beans, cherry tomatoes, mushrooms,carrots, celery
Instructions
- Finely chop all veggies - if you have children or fussy eaters in the house you might consider putting them through a food processor to "hide" them as they will melt down during cooking and be almost undetectable.
- Add oil to large frying pan or skillet
- Add onion to hot oil and fry off until clear
- Add mince and cook until browned through - use a potato masher and mash mince while cooking to get a really fine mince (no big lumpy mincey bits)
- Add spices, flours, pepper, parsley, sauces, stock powder & water(OR liquid stock) and mix through until all combined
- Add all other vegetables, mix through mince mixture
- Add red wine, if using (makes a BIG difference - savoury mince ala burgundy beef)
- Cook on simmer covered for about 30 minutes, then take cover off and simmer for approx 30 minutes or longer (depends on your hotplate/burner
