
Rissoles for the Soul
Ingredients
1/2 cup (or more) oatbran / rolled oats blitzed until fine in food processor (for binding)
1 onion, finely diced
1 1/2 cups of blitzed vegetables (whatever you have in fridge - I use zucchini, capsicum, carrot and mushrooms)
1/4 cup finely chopped parsley (optional)
500g very lean beef mince
1 teaspoon massels beef-style stock powder
3 teaspoons mixed herbs
1 egg
2 tablespoons oyster sauce (optional)
Pepper to taste
Small amount of oil of your choice to cook
Instructions
By blitzing or putting your vegetables in a food processor you are not only adding a lot of moisture to these rissoles, but you can HIDE a lot of veggies in these rissoles, which is important if you have fussy eaters in the household!
I also make double to triple batches of these, cook them and then freeze them for the nights I know I'm going to pressed for time to prepare a healthy meal. Simply defrost, heat up and have with some steamed veggies on the side. Totally yum, quick and healthy!
- Place vegetables, mince and all other ingredients in bowl and combine well with hands. You might need extra oat bran for binding if too moist.
- Shape into 12 patties & cook
I use a BBQ to cook these as it saves washing up and I can cook large batches.
(These can be baked, but I find they dry out too much)
