
Rich Avocado Chocolate Mousse
Ingredients
2 ripe avocados, peeled, stoned and roughly chopped
35 g cacao or good quality cocoa powder
2 tablespoons maple syrup
1-2 teaspoons vanilla extract
Small pinch sea salt
2 tablespoons almond milk
Instructions
- Put all ingredients in a blender or food processor and process until combined.
- Scrape down the sides and process again for another minute or until the mixture becomes airy
- If it's still too thick add a little extra almond milk
- Spoon the mousse into small serving dishes (rice bowls, for example) and serve immediately (or cover and chill in the fridge for up to 4 hours)
