Rich Avocado Chocolate Mousse

2 ripe avocados, peeled, stoned and roughly chopped
35 g cacao or good quality cocoa powder
2 tablespoons maple syrup
1-2 teaspoons vanilla extract
Small pinch sea salt
2 tablespoons almond milk


  1. Put all ingredients in a blender or food processor and process until combined.
  2. Scrape down the sides and process again for another minute or until the mixture becomes airy
  3. If it's still too thick add a little extra almond milk
  4. Spoon the mousse into small serving dishes (rice bowls, for example) and serve immediately (or cover and chill in the fridge for up to 4 hours)
