Potato & Lentil Patties

I cup brown lentils (drained tinned is fine or soak your own)
2 teasp oil (of your choosing)
2 medium potatoes, chopped finely
1 medium carrot, grated coarsely
1 clove garlic, crushed
1 small white onion, chopped finely
3 teasp mild curry powder
1/2 teasp ground cumin
1/2 teasp ground corriander
1 teasp nigella seeds (optional)
1/3 cup chick pea flour (besan) OR any other plain flour you like to use
1/4 cup sesame seeds
1 egg, lightly beaten
Crumb of your choosing - I like old fashioned corn flake crumbs in place of bread crumbs


  1. Heat oil in large frying pan
  2. Cook potato, carrot and garlic, stirring until potato is tender
  3. Add onion, curry, spices and cook stirring until fragrant
  4. Combine lentils, potato mixture, flour, seeds and egg in a medium bowl and mix well
  5. Shape mixture into 8 patties and coat in crumbs (bread, cornflake, quinoa etc...) and refridgerate for 30 minutes
  6. Place patties on oven tray and coat with cooking oil spray
  7. Bake uncovered in moderate oven for approx. 30 minutes or until browned.
  8. Serve warm or cold with raaita* and chutney if desired.
  9. (*Raaita - plain natural yoghurt spiced with cumin, lemon & corriander with grated cucumber)
