Potato & Bacon Pita Pizzas

Ingredients

Wholemeal pita breads
Tomato paste
Dried oregano
Mushrooms, sliced finely
Spring onions, chopped
Cooked potatoes with skin on, sliced (left over roast potatoes are ideal - otherwise just cook some potatoes in their jackets until just tender)
Bacon, diced or sliced (however you like it)
Natural full fat yoghurt
Mozerella cheese

Instructions

  1. Spread pita breads with tomatoe paste
  2. Sprinkle base with oregano leaves
  3. Sprinkle 1 tablespoons of cheese over base
  4. Arrange as many potato slices that will fit on your pita bread
  5. Add mushrooms ontop (as many as will fit)
  6. Sprinkle bacon (amount to your liking)
  7. Sprinkle a liberal amount of spring onions over top
  8. Spoon "globs" of natural yoghurt over toppings - this will firm up during the cooking process
  9. Sprinkle with small amount of mozerella cheese
  10. Bake on a cooling rack (so the base goes crispy instead of soggy) until golden brown
  11. Enjoy with a healthy green side salad.
