
Potato & Bacon Pita Pizzas
If you ‘need’ to eat pizza then make it yourself & load it with vegetables!
Ingredients
Wholemeal pita breads
Tomato paste
Dried oregano
Mushrooms, sliced finely
Spring onions, chopped
Cooked potatoes with skin on, sliced (left over roast potatoes are ideal - otherwise just cook some potatoes in their jackets until just tender)
Bacon, diced or sliced (however you like it)
Natural full fat yoghurt
Mozerella cheese
Instructions
- Spread pita breads with tomatoe paste
- Sprinkle base with oregano leaves
- Sprinkle 1 tablespoons of cheese over base
- Arrange as many potato slices that will fit on your pita bread
- Add mushrooms ontop (as many as will fit)
- Sprinkle bacon (amount to your liking)
- Sprinkle a liberal amount of spring onions over top
- Spoon "globs" of natural yoghurt over toppings - this will firm up during the cooking process
- Sprinkle with small amount of mozerella cheese
- Bake on a cooling rack (so the base goes crispy instead of soggy) until golden brown
- Enjoy with a healthy green side salad.
