Ingredients

1 cup cashews
1 cup shredded coconut
10 pitted dates
1-2 tbsp maple syrup
Juice of 1-2 lemons
Zest of 1 lemon OR lime
1 tsp vanilla extract

Instructions

  1. Process all ingredients in food processor - leave in fridge for 1/2 hour then roll into balls and roll in coconut
  2. Super yum!
