
French Onion Soup
Even if you’re not a fan of onions, this is a winning recipe for winter!
Ingredients
90g butter
4 large onions
1 clove garlic
1 tablespoon flour
1 teaspoon sugar
1 litre beef stock
3 cups water
salt, pepper
1/3 cup dry red wine
1 tablespoon dry sherry
Instructions
- Heat butter in large pan, add peeled and thinly sliced onions and crushed garlic
- Saute gently until onions are golden brown
- Add flour and stir until combined
- Add sugar, beef stock, water, salt, pepper and red wine
- Stir until combined
- Bring to boil then reduce heat and simmer covered for 45 minutes, stirring occasionally
- Add sherry and simmer for a further 5 minutes
- (Great topped with a slice of sourdough that has been put under the grill with a slice of cheese)
