
Freekeh & Pumpkin Salad
A different & refreshing take on salads
Ingredients
1 bag of salad greens
1/4 pumpkin piece, cubed and roasted
1/2 cup Mckenzies brand "Lentils, Freekeh and Beans" superblend (found where pulses and dried beans are in the supermarket) - cooked & cooled
1/3 cup lightly toasted flaked almonds
1/2 cup shaved parmesan cheese
1/2 avocado, sliced
Pesto of your choice (I prefer basil for this combination)
Fresh cracked pepper
Instructions
- Layer half the salad greens on a small plate/platter
- Scatter half of pumpkin bits, almonds and parmesan cheese over salad greens
- Layer the remaining half of the salad greens over the top
- Scatter remaining half of pumpkin bits, almonds and parmesan cheese over salad greens
- Lay sliced avocado in centre of salad
- Mix approx 1/4 cup pesto with 2 tabs of hot water until pesto is runny
- Drizzle pesto over salad and cracked pepper over the top to finish
Make this a main meal by adding a protein of your choice - grilled chicken, lamb etc...
