Falafel, Feta & Rice Salad

Warm summer days call for easy dinners like this one

1 1/2 cups cooked brown rice
1/4 cup of currants or sultanas
1/4 cup lemon or lime juice
225g packet of premade falafel balls (You can make your own falafels, but I'm offering the easy-as version of this recipe)
2 large carrots, cut into long matchsticks or put through a spiral grater/zoodle maker
Big handful of baby rocket
1/3 cup shredded fresh mint
2 tablespoons extra virgin olive oil
200g feta cheese, crumbled


  1. Combine the currants/sultanas and lemon/lime juice in a small bowl
  2. Set aside to soak for 5 minutes
  3. Heat the falafels following the directions on the packet, then break roughly into pieces
  4. Add the currant/sultana mixture to the cooked rice in a large bowl with the carrot, rocket and mint
  5. Drizzle with oil
  6. Season if desired and toss to combine
  7. Serve on either a large platter or individual bowls, and top with falafels and fetta cheese
