1 1/4 cups pitted soft dates (medjool, or soak dried dates in small amount of hot water for 15 minutes)
1 1/4 cups raw almonds
1/2 cup nut butter of your choice (I use almond butter)
1/4 cup cacao powder or good quality cocoa powder
2-3 tablespoons brewed expressso coffee, cooled
1 to 3 tablespoons of ground coffee/plunger coffee (I use fair trade African blend)
1 to 2 tablespoons of vanilla extract or vanilla bean paste (not essence)
1/2 teaspoon salt
Desicated coconut to roll balls in


Note: You will need a high powered food processor for this recipe, otherwise you risk burning out the motor of a small one!
  1. Ensure all dates are pitted before beginning
  2. Process/blitz almonds until resembling a grainy flour
  3. Add dates and process/blitz until smooth (this is where the high powered food processor comes into play)
  4. Add remaining ingredients (except coconut) and process until all combined and smooth
  5. With wet hands, roll teaspoons of mixture into small balls then roll in coconut
  6. Refrigerate until firm & enjoy
The strength of the coffee flavour is to personal taste hence the 1-3 tablespoons of ground coffee. I personally like a strong coffee flavour in my energy balls, so I use 3 tablespoons.
