Eggs Benedict - the healthy way!

Try this healthy version of a much loved breakfast treat

Ingredients

2 free range eggs (note how ORANGE the yokes are in the picture - they're from my own chooks!)
Avocado
Ham - thick slice, preferably off the bone
Mayonaise
Dijon mustard
White wine vinegar

Instructions

  1. Mix together approx 1 tablesppon mayonaise, 1-2 teaspoons dijon mustard & a splash of white wine vinegar (taste & adjust to your liking) & place to the side
  2. Mash avocado until smooth, place to the side
  3. Bring a pan of water to the boil
  4. Poach 2 eggs to your liking (soft, hard)
  5. While eggs are poaching, quickly pan fry the thick slab of ham
  6. Put ham on warmed plate, top with mashed avocado, then poached eggs and drizzle "hollandaise" sauce over the top
  7. Serves 1
