
Eggs Benedict - the healthy way!
Try this healthy version of a much loved breakfast treat
Ingredients
2 free range eggs (note how ORANGE the yokes are in the picture - they're from my own chooks!)
Avocado
Ham - thick slice, preferably off the bone
Mayonaise
Dijon mustard
White wine vinegar
Instructions
- Mix together approx 1 tablesppon mayonaise, 1-2 teaspoons dijon mustard & a splash of white wine vinegar (taste & adjust to your liking) & place to the side
- Mash avocado until smooth, place to the side
- Bring a pan of water to the boil
- Poach 2 eggs to your liking (soft, hard)
- While eggs are poaching, quickly pan fry the thick slab of ham
- Put ham on warmed plate, top with mashed avocado, then poached eggs and drizzle "hollandaise" sauce over the top
- Serves 1
