Blueberry Banana Bread (GF, paleo)

1 cup almond meal
1/4 cup coconut flour
1 teasp baking soda
1/2 teaspoon salt
2 tabs olive oil (or oil of your choice - coconut, macadamia etc..)
3 eggs
2 very ripe bananas, mashed
1/4 cup maple syrup (or raw honey)
2 tablespoons of rum (optional)
1 cup fresh blueberries


  1. Preheat your oven to 180 degrees / moderate temperature
  2. In a large bowl combine all of your dry ingredients
  3. In a separate bowl, mix together all of your wet ingredients
  4. Slowly add your wet ingredients into your dry ingredients and mix together with an electric hand mixer. Mix until everything is combined well.
  5. Fold in your blueberries being careful not to over mix and bruise your blueberries
  6. Line a loaf pan with baking paper
  7. Pour the batter into the loaf pan and speak evenly
  8. Bake for 40 minutes or until golden brown and a skewer comes out cleanly when inserted into the centre of your loaf
  9. Note: I make this in slice-type pan rather than as a cake in a loaf pan, but it works either way.
