
Blueberry Banana Bread (GF, paleo)
Ingredients
1 cup almond meal
1/4 cup coconut flour
1 teasp baking soda
1/2 teaspoon salt
2 tabs olive oil (or oil of your choice - coconut, macadamia etc..)
3 eggs
2 very ripe bananas, mashed
1/4 cup maple syrup (or raw honey)
2 tablespoons of rum (optional)
1 cup fresh blueberries
Instructions
- Preheat your oven to 180 degrees / moderate temperature
- In a large bowl combine all of your dry ingredients
- In a separate bowl, mix together all of your wet ingredients
- Slowly add your wet ingredients into your dry ingredients and mix together with an electric hand mixer. Mix until everything is combined well.
- Fold in your blueberries being careful not to over mix and bruise your blueberries
- Line a loaf pan with baking paper
- Pour the batter into the loaf pan and speak evenly
- Bake for 40 minutes or until golden brown and a skewer comes out cleanly when inserted into the centre of your loaf
Note: I make this in slice-type pan rather than as a cake in a loaf pan, but it works either way.
