
Anzac Biscuits
There are two recipes here – one using standard sugar, the other using maple syrup as the sweetener.
Ingredients
Version 1 - sugar as sweetener
1 cup rolled oats
1 cup plain spelt flour
1/2 cup sugar
3/4 cup coconut
125g butter
2 tablespoons golden syrup
1/2 teaspoon bicarb soda
2 tablespoons boiling water
Version 2 - maple syrup as sweetener
1 cup rolled oats
1 cup spelt plain flour
1/2 cup maple syrup
1 cup coconut
125g butter
2 tablespoons golden syrup
1/2 teaspoon bicarb soda
2 tablespoons boiling water
Instructions
- Same method for both versions:
- Preheat oven to slow (160 c)
- Combine oats, flour, sugar/maple syrup & coconut in a large bowl.
- Combine butter and golden syrup and stir over gentle heat until melted/melt in microwave.
- Mix soda with boiling water & add to melted butter mix.
- Stir into bowl with other ingredients.
- Drop teaspoonfuls onto a greased or lined baking sheet and allow room for spreading
- Cook in slow oven for 20 minutes or until golden brown.
